1. Preheat the oven to 200°C/400°F. Wash and dry the different colored tomatoes and basil leaves. In a pan, pour 2 tablespoons of olive oil with honey and balsamic cream, then add the tomatoes, basil, and thyme (set aside a few basil leaves and thyme sprigs). Let them cook over low heat for 20 minutes, turning them halfway through.
2. Place the puff pastry in a tart pan lined with parchment paper, then cover the bottom with breadcrumbs and parmesan. Arrange the whole tomatoes on the pastry, then bake for 30 minutes. Once the tart is cooked, add the sliced mozzarella, reserved thyme sprigs, and basil. Drizzle with a dash of olive oil, season with salt and freshly ground pepper, and enjoy.
