Chicken Skewers with Peanut Sauce

Instructions

  • 1.   Cut the chicken breasts into cubes. Peel and press the garlic.
  • 2.   Mix the coconut milk, peanut butter, brown sugar, garlic, salt, and pepper. Add the chicken and let it marinate for 10 minutes.
  • 3.   Preheat the grill in the oven. Thread the chicken cubes onto skewers and place them on a baking sheet lined with parchment paper. Bake for 4 minutes on each side.
  • 4.   Divide the rice, sprinkle with toasted almonds, and arrange the skewers. Serve immediately.
