Cod and Vegetable Papillote with Lime

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
    Wash and cut the zucchini, carrot, red bell pepper, and red onion into julienne or small pieces.
    In a bowl, mix the lime juice, olive oil, salt, and pepper to prepare the marinade.
    Place the cod fillets in the center of two large sheets of parchment paper.
    Arrange the cut vegetables around the cod fillets.
    Pour the marinade over the preparation.
    Fold and seal the papillotes tightly.
    Place the papillotes on a baking sheet and bake for about 15 to 20 minutes, until the fish is cooked and the vegetables are tender.
    Remove the papillotes from the oven and serve directly in the parchment paper.
