1. Mix all the ingredients except for the brown sugar, let it rest until some of the bubbles on the surface dissipate.
2. Pour the mixture into ramekins.
3. Place in a preheated oven at 110°C (230°F) for 1 hour in a water bath with 1 liter of water.
4. Let cool outside for at least 1 hour to allow excess water to evaporate. Then refrigerate.
5. Just before serving, caramelize them. Use about 1 teaspoon of sugar per ramekin, spread the sugar by tapping with your hands and remove the excess if you don't want it to be too sweet, so the layer will be thin.
Use a blowtorch to create the caramel. Be careful, it can create flames!
