Dublin Coddle

The Coddle (also known as "Dublin Coddle") is a specialty from Dublin, traditionally served on Saturday nights in Irish homes. Made with potatoes, sausages or bacon, and onions, this dish is known to be one of the most economical! And it's even better on cold winter nights: a coddle always fills you up and has the advantage of warming you up!

Instructions

  • 1.   Peel the potatoes, wash them, and then cook them in boiling water.
  • 2.   Then cut the bacon and sausages into slices and/or small cubes.
  • 3.   Place them in a saucepan and cover them with broth.
  • 4.   Cook the sausages and bacon for 5/10 minutes so that the meat absorbs the broth well.
  • 5.   Then take a large pot and line the bottom with a layer of potatoes, then alternate with a layer of meat, then potatoes...etc. until fully covered.
  • 6.   Cook for 25 to 30 minutes.
  • 7.   Season (salt, pepper...etc.).
  • 8.   All you have to do is serve it with a pint of dark Irish beer and you're good to go!

Notes & Suggestions

  • Coddle is usually consumed on rainy days and is often accompanied by a creamy pint of stout (an Irish beer).
  • A delicious dish, although a bit rich! Definitely worth a try if you want to discover the greatest Irish specialties!
