Instructions

  • 1.   Preheat the oven to 210 °C (410 °F).
  • 2.   Unroll the puff pastry. Line a tart pan with it and prick the bottom with a fork. Cover it with a sheet of parchment paper. Place baking beads on top and bake for 10 minutes.
  • 3.   Meanwhile, peel and remove the seeds from the pumpkin flesh. Cut it into small cubes. Put them in a saucepan with milk, salt, and pepper. Cook until the pieces easily mash. Drain and blend into a smooth puree. Pour the obtained puree back into the saucepan. Heat it over low heat, stirring to dry it out.
  • 4.   Sauté the bacon in a pan with peeled and sliced red onions and thyme leaves until the red onions are melted.
  • 5.   Beat the eggs in a bowl. Incorporate the lukewarm pumpkin puree, then the onion and bacon mixture, and the grated Gruyère cheese. Mix well and pour into the tart shell.
  • 6.   Bake for 25 minutes at 180 °C (350 °F) and serve hot.
