Crustless leek, bacon, and goat cheese quiche

Here is a recipe for a light crustless quiche with leeks, bacon, and goat cheese. The flavors blend perfectly and it's an ideal dish for a dinner or during a diet. Kids will love the fluffy texture!

Instructions

  • 1.   Peel and finely chop the onion.
  • 2.   In a sauté pan, heat a drizzle of olive oil and sauté the onion. Add the sliced leeks and bacon. Cook for about ten minutes, stirring regularly.
  • 3.   Preheat the oven to 180°C (350°F).
  • 4.   In a bowl, beat the eggs. Add the milk, mustard, and flour. Mix well.
  • 5.   Incorporate the leek/onion/bacon mixture into the batter. Mix well.
  • 6.   Pour the batter into a silicone mold and arrange a few slices of goat cheese on top.
  • 7.   Bake for 40 to 45 minutes. Let it cool for a few minutes, then unmold and enjoy.

  • 2 leek white
  • 1 onion
  • 100 g of bacon strips
  • 3 eggs
  • 40 cl of skim milk
  • 1 tablespoon of mustard
  • 100 g of flour
  • 85 g of goat cheese log
  • 1 teaspoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
