Instructions

  • 1.   For your asparagus velouté, start by draining your asparagus. Once they are clean, cut off the tips of the asparagus. Set them aside. Put the rest of the asparagus in a small pot with the water, bouillon cube, onion, and shallot, all previously minced.
  • 2.   Cook over low heat for 30 minutes. Check the doneness by poking with a knife tip. If the knife goes in easily, your asparagus is cooked.
  • 3.   Once your asparagus is cooked enough, blend everything in a blender.
  • 4.   Add the heavy cream, salt, and pepper to restore the velouté's creaminess.
  • 5.   Put the velouté back in the pot, add the asparagus tips. Your asparagus velouté is now ready! Reheat gently before serving.
