Eggs and fruit cake

An ideal cake for breakfast. This is a variant of an ultra light and fluffy sponge cake used in different countries as a traditional Easter cake. (Lammele, pao de lo, ...)

Instructions

  • 1.   Preheat the oven to 160 and prepare the ingredients.
  • 2.   Cut the fruits (cubed, sliced, according to preferences) and set aside.
  • 3.   Beat the egg whites until stiff peaks form.
    Gently fold in the sugar while continuing to beat with a whisk, as if making a meringue.
  • 4.   (To be tested next time: beat the egg yolks with a little sugar to whiten them and incorporate the flour, then pour into the whites.
    Test 2: cut with starch and add compote)
  • 5.   While beating more gently, add the egg yolks.
  • 6.   Finally, gently fold in the flour, being careful not to break the egg whites.
  • 7.   Pass the batter through a sieve to pour it into a greased pan.
    Cover with the fruits and bake for 45 minutes.

Notes & Suggestions

  • Attention, for those with a sweet tooth, the sugar comes from the fruit and very little from the cake. You can easily double the amount of sugar specified.
