Instructions

  • 1.   1. Sponge cake: Preheat the oven to 200 ° C (392 ° F). Mix the eggs and egg yolks with the sugar until they whiten. Gradually add the flour and honey.
    Beat the egg whites until stiff peaks form. Gently fold them into the mixture. Spread the batter onto a baking sheet lined with parchment paper. Bake for 8 minutes. Once out of the oven, roll the cake for the first time.
  • 2.   2. Apple compote: peel the golden apples and roughly chop them. In a sauté pan, simmer the apples and coconut sugar to make an apple compote. Add the pectin and cinnamon during cooking.
    Towards the end of cooking, finely dice Granny Smith apples (with or without the skin, according to your preference) to add them raw to the compote. This will add a crunchy/tart element.
  • 3.   3. Spread the compote onto the cake, roll it up, and place it in a serving dish.
    You can decorate the log with whipped plant-based cream (500 g of plant-based cream with a high fat percentage and 50 g of coconut sugar) or with aquafaba whipped into meringue (prepare it just before serving, otherwise it will deflate).
