Recipe #2: Pea and Ham Risotto

Instructions

  • 1.   Peel the shallot and roughly chop it. Put it in the food processor
    equipped with the ultrablade chopping blade and mix at speed 11 for
    10 seconds.
  • 2.   Replace the blade with the mixer attachment. Pour the olive oil into
    the food processor and start the simmer program P1 without the cap at 130 °C
    for 7 minutes.
  • 3.   When the timer shows 4 minutes remaining, add the rice. When there is
    only 1 minute left, add the white wine.
  • 4.   At the end of the program, pour in the chicken broth and start the simmer program P3 at 95 °C for 22 minutes, then put on the cap. 10 minutes before
    the end of cooking, add the peas.
  • 5.   At the end of cooking, add the Parmesan cheese and the ham cut into
    pieces and mix gently. Adjust the seasoning and serve immediately.

  • 300 g of Arborio rice
  • 1 shallot
  • 10 cl of olive oil
  • 8 cl of dry white wine
  • 90 cl of vegetable broth
  • 170 g of pea
  • 30 g of grated parmesan
  • 80 g of Parma ham
  • salt (according to taste)
  • pepper (according to taste)
