Instructions

  • 1.   Preheat your oven to 200 °C (392 °F).
    Slice 900 g (2 lbs) of onions and cook them for 30 minutes in boiling water with baking soda (optional). Drain and blend.
    Slice the remaining 300 g (10.5 oz) of onions and cook them in a pan with a little fat for about 25 minutes.
    Mix the onion puree with the eggs, cream, and milk. Season with salt, pepper, and a pinch of nutmeg.
    Spread the onions, bacon, and mixture onto the pastry.
    Bake for approximately 30 minutes.
