Instructions
1. Prepare the crepe batter and let it rest for about 30 minutes.
2. Preheat the oven to 7/8 thermostat (180°).
3. Brush your fresh mushrooms to remove any dirt and finely chop them.
4. Peel the shallots and finely chop them.
Lightly sweat the shallots in melted butter, then add the mushrooms, salt, and pepper.
Cover and let them release their juices.
Uncover and cook over low heat until completely evaporated.
Let it cool, then add the fresh cream.
5. Lightly butter your pan and cook your crepes (thin ones).
6. Let everything cool.
7. Place a slice of ham cut in half on each crepe and add a tablespoon of mushroom duxelles in the center.
8. Roll up the crepes and place them in a buttered gratin dish.
9. Generously coat each ficelle with fresh cream.
10. Sprinkle with grated Emmental cheese and bake for 20 minutes.
Let it brown and serve hot!
