. Peel the potatoes.

. Precook them by placing them in a pot of water and cooking them for about 15 to 20 minutes.

. Drain them and let them cool.

. Cut the potatoes into cubes and sauté them in a pan with a little olive oil until golden brown.

. Add the sliced mushrooms and minced garlic, then continue cooking for a few minutes.

. Slice the chorizo and add it to the potatoes and mushrooms.

. Season with a little salt, pepper, and chopped parsley before serving hot.
