Instructions

  • 1.   1° Peel the cucumber, cut it into pieces, then remove the seeds. Wash the mint leaves.
  • 2.   2° In a blender, add the cucumber, mint leaves, lemon juice, olive oil, salt, and pepper. Blend until you obtain a homogeneous mixture.
  • 3.   3° Place the cucumber and mint gazpacho in the refrigerator for 1 hour before serving.
