No-Bake Oreo Cheesecake

Instructions

  • 1.   Blend the Oreos with the butter to obtain a dough that will be the base of the cheesecake and spread it in the bottom of a springform pan previously lined with parchment paper. Press it down firmly, flatten the dough, and place it in the refrigerator for 15 minutes.
  • 2.   Melt the white chocolate, cut into pieces, in the microwave or in a double boiler.
  • 3.   In a bowl, mix the cream cheese, mascarpone, and melted white chocolate to obtain a thick cream. Cut the remaining Oreos into pieces and incorporate them into the mixture, then spread it evenly over the cheesecake base. Place it in the refrigerator for 2 hours.
  • 4.   In a chilled bowl, pour the cold heavy cream, cold mascarpone, sugar, and vanilla seeds obtained by splitting the vanilla bean with a knife. Whisk everything together to obtain a thick and firm whipped cream. Fill a piping bag. Remove the cheesecake from the pan, place it on a serving plate, and cover the cake with the whipped cream. Decorate with mini Oreos.
