Instructions

  • 1.   Peel the mangoes and cut them into beautiful 1 cm slices.
  • 2.   Make a dry caramel in a saucepan, pour the caramel into your mold on a piece of parchment paper, and arrange the mango slices on top.
  • 3.   Pre-cook for 10 minutes at 180°C (356°F).
  • 4.   Roll out a puff pastry with a little brown sugar and roll the sugar into it.
  • 5.   Fold the edges and place the pastry on top of the mangoes.
  • 6.   Prick the pastry with a fork and bake for 25 minutes at 180°C (356°F).
  • 7.   Place a plate and flip your tarte tatin.
