Panna cotta without refined sugar or gelatin

A healthy version of the traditional panna cotta, without refined sugar or gelatin. These verrines will offer you freshness and lightness, without added sugars, fats, or lactose.

Instructions

  • 1.   In a bowl, mix the coconut milk and agar-agar powder, then add the coconut cream and agave syrup, mix well.
  • 2.   Pour everything into a saucepan, heat over medium heat. When it starts to boil, remove from heat and let cool for a few minutes.
  • 3.   Pour the cream into verrines (for a tilted effect like in the photos above, place the verrines in a loaf pan, for example, so that they remain tilted).
  • 4.   Refrigerate for at least 2 hours.
  • 5.   Place the frozen raspberries in a saucepan over medium heat, heat until you obtain a raspberry puree.
  • 6.   Pour everything into a fine sieve to recover only the juice. Add agave syrup to the coulis, mix well, and refrigerate.
  • 7.   Pour the coulis before serving so that it does not seep into the cream for a top visual!

Notes & Suggestions

  • You can make the coulis with other fruits according to your taste!
