Lemon and cilantro avocado puree

Instructions

  • 1.   Cut the avocados in half to remove the pit. Score the flesh with a knife without piercing the skin and scoop it out with a spoon. Place it in a bowl and generously squeeze lemon juice over it.
  • 2.   Mash the flesh with a fork.
  • 3.   Finely chop the cilantro and mix it into the avocado flesh. Add salt. Add a pinch of Espelette pepper according to taste.
  • 4.   Optional: for a fruity and tangy note, add some lemon zest.

Notes & Suggestions

  • Choose a ripe avocado: Gently press the top of the avocado (stem side). If it is soft to the touch (not mushy!), it means the fruit is ripe. Do not rely on the color (darker or lighter) or the texture of the skin (smoother or rougher), as they vary depending on the variety.
