Broccoli soup with coconut milk

Instructions

  • 1.   Sauté the minced onion in olive oil.
  • 2.   Pour 1 liter of cold water into the same pot and add the bouillon cube.
  • 3.   Meanwhile, separate the small broccoli florets and finely chop the stem into small pieces.
  • 4.   When the broth is boiling, add the stem to the pot.
  • 5.   Cover, bring to a boil, and let simmer on low heat for 15 minutes.
  • 6.   Then, add the florets, stir well, cover, and let simmer for 10 minutes, until the florets are tender and easily mashed with a spoon.
  • 7.   Off the heat, add the coconut milk and blend.
  • 8.   You will obtain a smooth and very mild soup!

  • 1 tablespoon of olive oil
