Instructions

  • 1.   In a gratin dish, arrange a layer of cooked rice, slices of zucchini, tomato quarters, canned artichoke hearts (any kind), and diced mozzarella.
  • 2.   Season with salt, pepper, sprinkle with Herbes de Provence, and drizzle with a tablespoon of olive oil.
  • 3.   Bake in a hot oven (375°F).
