Mejadra - Lentil and Fried Onion Rice

Instructions

  • 1.   Pour the lentils into a large pot of salted water, bring to a boil and let cook for 15 minutes; drain and set aside. Keep the pot for later use.
  • 2.   Peel and thinly slice the onions; pour them into a bowl and sprinkle with flour and salt, then mix well.
  • 3.   Add half of the olive oil, quickly coat the onions, spread them out in the air fryer tray, and fry for 15-20 minutes until golden. (Alternatively, sauté in a small amount of frying oil in a pan if an air fryer is not available)
  • 4.   In a saucepan, over medium heat, pour the olive oil and add the basmati rice; stir until it becomes translucent.
  • 5.   Then add the spices, sugar, a pinch of salt and mix.
  • 6.   Add the lentils and pour in the water.
  • 7.   Bring to a boil, reduce the heat, and cover; let cook for 15 minutes.
  • 8.   Add half of the fried onions to the rice-lentil mixture, and gently mix.
  • 9.   Pour into a dish and garnish with the remaining fried onions to serve.

Ingredients for servings

  • 250 g of dry green lentil
  • 200 g of basmati rice
  • 600 ml of water
  • 1 teaspoon of sugar
  • 4 onions
  • 2 tablespoon of flour
  • 4 tablespoon of olive oil
  • Épices :
  • 2 teaspoon of ground cumin
  • 1 teaspoon of turmeric powder
  • 2 teaspoon of cinnamon powder
  • 2 teaspoon of ground coriander
  • ½ teaspoon of nutmeg
  • ½ teaspoon of ginger powder
  • 2 cloves (optional)
  • 1 teaspoon of pepper
  • salt (according to taste)

    Not a complicated and relatively quick recipe, if you have the spices. To accompany, I cooked pieces of chicken on a rack above the onions in the air fryer. Then, I placed the onions on paper towels to remove the excess fat from the chicken. A tasty dish.
