Tuna Pasta Salad

When the sunny days come back along with picnic invitations, we feel like improvising a fresh salad that is both delicious and light, rather than cooking a heavy saucy dish. So here is a recipe for a summer and balanced salad that will always be a hit, and that you can enjoy on the spot or take with you.

Instructions

  • 1.   Start by cooking the penne (or another type of pasta) in a pot of salted boiling water, following the cooking time indicated on the package. Rinse them under cold water and drain them so that the pasta remains al dente, then let them cool in the colander.
  • 2.   Meanwhile, prepare the vinaigrette (without vinegar) at the bottom of the salad bowl by mixing olive oil, mustard, mayonnaise, salt, and pepper (you can also add a spoonful of lemon juice if desired), then wash the tomato and cut it into quarters, and make sure to drain the olives and tuna.
  • 3.   All that's left is to assemble your summer salad: put the pasta in the salad bowl, add the tomatoes, olives, and tuna. Mix well so that the ingredients are coated with the vinaigrette, and adjust the seasoning if necessary. Serve chilled.
