Grilled Eggplant in the Oven

Instructions

  • 1.   Preheat the oven to 200°C (392°F).
    Rinse and cut the eggplants in half lengthwise (keep the skin). Using the tip of a knife, score the flesh and distribute the 2 cloves of garlic on top.
  • 2.   Arrange the eggplants in a dish or on a baking sheet lined with parchment paper.
    Season with salt and pepper, drizzle with a little olive oil, and sprinkle with herbs and Parmesan cheese.
    Bake the vegetables for 30 to 35 minutes in a convection oven. The eggplants should be tender.
    Once they are tender, remove them from the oven and serve immediately.
