Instructions

  • 1.   Shortcrust Pastry
    Mix the flours and salt, then make a well: pour the oil into it. Mix the edges to obtain a dough, then add the beaten egg and gradually add water while mixing more and more, adding water little by little. Form a dough ball and refrigerate it.

    Roll out the dough on a parchment paper sheet and place it in a tart pan.

    Bake blind for 10 minutes in a 180°C (350°F) oven.
  • 2.   Filling
    Sauté the bacon in a pan and drain it on paper towels.

    In a bowl, beat the eggs, then mix them with cottage cheese, mustard, salt, and pepper.

    Arrange the bacon and grated cheese on the pre-baked pastry, then pour in the mixture.

    Bake for 25 minutes at 180°C (350°F) (extend the cooking time if necessary). Serve with raw vegetables or arugula or mixed greens.

    Variation: replace the bacon with smoked fish and/or canned tuna, add cheese according to taste.

  • 10 cl of water
  • 300 g of bacon cube
  • 2 tablespoon of mustard
  • 70 g of grated Gruyère cheese
  • salt (according to taste)
  • pepper (according to taste)
