Curry is a spice that stands on its own as it adds flavor to everything it touches. This typically Indian recipe is always a success if you enjoy a good, well-rounded dish with just the right amount of spice. It is important to let it simmer so that the sauce sticks to the meat, but not for too long to avoid it becoming too dry, as the goal is to pour it over the rice.

Instructions

  • 1.   Cut the chicken into large cubes. Heat a casserole dish, then place the chicken pieces in it.
  • 2.   Brown them over medium heat, stirring for a few minutes. Pour in the tomatoes, coconut milk, curry, a little salt, and mix.
  • 3.   Cover and let simmer over very low heat for about 30 minutes (regularly check that the sauce does not stick to the bottom of the casserole dish).

Notes & Suggestions

  • Serve with basmati rice.
