Instructions

  • 1.   Cut the eggplant into cubes. Slice the red onion and mince the garlic.
  • 2.   In a large pot, place all the ingredients. Season and cover with 60cl of water. Cook for 15 minutes over medium heat, stirring regularly.
  • 3.   Let it rest for a few minutes before serving with some basil leaves.
