Instructions

  • 1.   Cut the eggplant in half. Wrap each half in aluminum foil and bake for 25 minutes at 180°C.
  • 2.   Scoop out the flesh and blend it with yogurt, garlic, and lemon juice. Drizzle with oil, season, and refrigerate until ready to serve.
