Mediterranean Tomato Rice

Instructions

  • 1.   Chop the onion, bell pepper, and garlic into small cubes, and sauté them in olive oil in a large skillet.
  • 2.   Deglaze the skillet with vegetable broth, and stir in the tomato paste. Let it simmer for a while over medium heat.
  • 3.   Stir in the rice and let it simmer again for 30 minutes, until the water has evaporated and the rice is cooked.
  • 4.   Season to taste with salt, pepper, and Italian herbs.

  • 220 g of tomato paste
  • 370 g of rice
  • 1 tablespoon of olive oil
  • 800 ml of vegetable broth
  • 2 teaspoon of Italian spice blend

  • pepper (according to taste)
