Caramelized apple and cinnamon Tiramisu

Instructions

  • 1.   Clean and peel the apples. Cut them into small cubes. Sauté them in a pan with butter for 3 minutes. Add honey and a teaspoon of cinnamon and let the apples caramelize until they turn slightly brown (about 2 minutes).
  • 2.   Drain the apples and reserve the juice.
  • 3.   Separate the egg whites and yolks.
  • 4.   Beat the yolks and sugar with a teaspoon of vanilla extract until the mixture becomes pale. Add the mascarpone and beat. (If possible, use an electric mixer to avoid lumps.)
  • 5.   Beat the egg whites until stiff peaks form. Gently fold them into the mascarpone mixture.
  • 6.   Roughly break the speculoos cookies and soak them in the apple cooking juice.
  • 7.   Place half of the cookies in a dish or glasses. Pour half of the mixture over them. Add the remaining speculoos and distribute the apples. Pour the remaining mixture.
  • 8.   Refrigerate for at least 4 hours. Sprinkle lightly with cinnamon before serving.
