Strawberry Basil Tiramisu

An easy, foolproof recipe for a refreshing strawberry tiramisu, with a homemade basil syrup for dipping the biscuits, a strawberry coulis, and a light mascarpone cream.

Instructions

  • 1.   Heat the sugar and 150 ml of water, then when it reaches boiling point, remove from heat and add basil leaves. Let it cool, allowing the basil to infuse.
  • 2.   Clean the strawberries, blend them with a little lemon juice and basil to obtain a coulis.
  • 3.   Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form. Set aside.
  • 4.   Whisk the egg yolks and sugar until the mixture is frothy and light.
  • 5.   Whisk the mascarpone, cream, and lemon zest until a thick cream is obtained. Set aside in a bowl.
  • 6.   Then mix it into the mascarpone cream mixture.
  • 7.   Assemble your tiramisu by alternating layers of coulis, pieces of strawberries, biscuits dipped in the mint basil syrup, and cream. You can repeat this process until the top of your container.

  • 250 g of mascarpone
  • 20 cl of heavy cream
  • 80 g of sugar

  • Sirop basilic :
  • 4 leaf of fresh basil
  • 50 g of sugar
  • 150 ml of water
