Express broccoli pancakes

Instructions

  • 1.   Cut the broccoli florets into pieces or use frozen broccoli
  • 2.   Place all the ingredients in the bowl of a blender
  • 3.   Blend until you obtain a smooth mixture.
  • 4.   Grease a frying pan with oil
  • 5.   Spread the mixture evenly
  • 6.   Cook for a few minutes on each side
  • 7.   Transfer the pancakes to a plate and repeat with the remaining batter.
  • 8.   Serve with salad and fresh soy cheese, for example. You can also add grated smoked tofu or seitan chorizo for added protein.

  • 100 g of broccoli
  • 130 g of flour
  • 20 cl of soy milk
  • 2 tablespoon of olive oil
  • 1 teaspoon of baking soda
  • 1 teaspoon of sweet paprika
  • salt (according to taste)
  • pepper (according to taste)
