Scallops in the old-fashioned way

Instructions

  • 1.   Thaw the scallops the day before preparation in a mixture of half milk and half water.
  • 2.   Put the scallops in white wine with salt and pepper and bring to a boil for 2 minutes.
  • 3.   Let cool off the heat and remove the scallops to place them in a dish.
  • 4.   Add two small shallots (or frozen shallots) to the cooking liquid and let it reduce.
  • 5.   In another saucepan, melt the butter. Add the flour and let it brown.
  • 6.   Add the cream and the shallot cooking liquid.
  • 7.   Adjust the seasoning, add the lemon juice, and off the heat, whisk in the egg yolks.
  • 8.   Coat the scallops with the sauce and sprinkle the dish with breadcrumbs.
  • 9.   Put the dish in the oven to brown and reheat.

  • 250 g of sour cream
  • 2 shallots
  • 30 g of butter
  • 2 eggs
  • ½ lemons
  • 1 tablespoon of flour
  • 1 breadcrumbs
  • salt (according to taste)
  • pepper (according to taste)
