Quick Cod Fritters

Instructions

  • 1.   Soak the cod in cold water for 24 hours (changing the water 2 or 3 times), then remove the skin and bones (Note: this soaking is unnecessary if using fresh white fish).
  • 2.   Mix the flour, milk, and egg until smooth, then add the crumbled cod and seasoning to taste.
  • 3.   Heat the oil and drop in large spoonfuls of the batter (like fritters).
  • 4.   Fry until the fritters are golden brown (about 4 or 5 minutes), drain, and serve.
  • 5.   NOTE: The fritters can also be made with cooked and peeled shrimp instead of cod. In Martinique, they are typically eaten as appetizers or used as a filling in sandwiches.

  • 1 teaspoon of chili pepper
  • 1 liter of frying oil
