One pan balsamic filet mignon & roasted vegetables

Instructions

  • 1.   Preheat the oven to 200°C. Peel and cut the carrots into diagonal slices.
  • 2.   Peel and cut the potatoes into quarters or sixths, depending on their size.

  • 3.   Peel and quarter the onions.
  • 4.   On a baking sheet or in an oven-safe dish, add the vegetables. Drizzle with a dash of olive oil, season with salt and pepper. Mix well, then bake for 30 minutes at 200°C.
  • 5.   Meanwhile, prepare the sauce. In a bowl, mix together the balsamic vinegar and honey.
  • 6.   In a shallow dish, place the filet mignon and pour the sauce over it. Coat it well with the sauce, then let it marinate in the refrigerator until the vegetables are done cooking.
  • 7.   After 30 minutes, remove the dish from the oven and add the filet mignon to it. Pour the remaining marinade and a dash of water (about 20ml of water) over it. Season with salt and pepper, then return to the oven for 20 minutes at 200°C.
  • 8.   Remove the dish from the oven, slice the filet mignon, and serve it with the roasted vegetables. It's ready!
