Instructions

  • 1.   Heat the oil and sauté the onion or scallion, the bacon, and the mushrooms for 5 minutes.
  • 2.   Pour in the cream and heat for 1 minute.
  • 3.   Crack the eggs without breaking the yolks and cook for 3 to 5 minutes over medium heat.
  • 4.   Season with salt and pepper. Sprinkle with chives.
