Glazed Honey Carrots

Instructions

  • 1.   Preparation. Preheat your oven to 425 °F (220 °C) and generously coat your baking dish (or baking sheet) with softened butter (*see note).
  • 2.   Assembly. In a medium mixing bowl, combine 2 pounds of sliced carrots with 3 tablespoons of warmed honey, 1 tablespoon of brown sugar, fresh herbs (2 teaspoons each of thyme and rosemary), and ½ teaspoon of salt and pepper. Transfer to your gratin dish and spread out in an even layer.
  • 3.   Bake. Bake in the oven at 425 °F (220 °C) for 20-25 minutes, opening the oven to stir the carrots twice during the cooking time to ensure even roasting. The roasted carrots should be lightly golden on the edges and easily pierced with a fork. Remove from the oven and serve immediately.
