Parsnip and sweet potato gratin

Instructions

  • 1.   Preheat the oven to 200°C. Thoroughly clean the leeks and cut them in half lengthwise. Peel the carrots, parsnips, and potatoes. Cut them in half lengthwise. Cut them to fit the dish.
  • 2.   Butter a gratin dish and arrange the vegetables in it. Season with salt, pepper, and sprinkle with sage. Drizzle with olive oil and cook for 30 minutes in a hot oven: they should be well cooked.
  • 3.   Whisk the eggs with the cream, mustard, a pinch of salt, and pour it over the ingredients. Finish cooking for 10 minutes in a hot oven. Sprinkle with grated cheese and let it brown for a few moments under the broiler.
