Shrimp with coconut milk and coriander

Instructions

  • 1.   Cook the rice in boiling water.
  • 2.   Peel and finely slice the onion.
  • 3.   Heat the oil in a wok and sauté the onion for 2 to 3 minutes over medium heat.
  • 4.   Add the spices and mix. Pour in the coconut milk and 5cl of water. Cover and simmer for 10 minutes over low heat.
  • 5.   Season with salt and pepper. Add the shrimp and continue cooking for 2 minutes.
  • 6.   Sprinkle the shrimp with fresh coriander. Serve immediately with the rice.

  • 200 g of rice
  • 1 onion
  • ½ teaspoon of turmeric powder
  • ½ teaspoon of ground cumin
  • ½ teaspoon of ground coriander
  • 15 cl of coconut milk
  • 300 g of raw peeled shrimp
  • 1 tablespoon of fresh coriander
  • 1 tablespoon of olive oil (optional)
  • salt (according to taste)
  • pepper (according to taste)
