Cod with coconut milk

Instructions

  • 1.   Cook rice in boiling water.
  • 2.   Peel and finely slice the onion.
  • 3.   Peel and cut the carrots into sticks.
  • 4.   Cut the cod into cubes.
  • 5.   Heat the oil in a wok and sauté the onion for 2 to 3 minutes over medium heat. Add the carrots and continue cooking for 5 minutes covered.
  • 6.   Add the fish, coconut milk, and 20cl of water. Season with salt and pepper and mix everything together. Let it cook for 10 minutes. Serve hot with rice.
