Instructions

  • 1.   In a saucepan, melt the butter; place the beef and let it brown on both sides; remove.
  • 2.   In the cooking butter, add the onions and let them brown; sprinkle with sugar or brown sugar; let it caramelize.
  • 3.   Pour in the beer; bring to a boil while stirring constantly.
  • 4.   Add the meat, thyme, bay leaf, parsley, sugar, and vinegar; season with salt and pepper; cover and let simmer for 45 minutes.
  • 5.   Spread a generous layer of mustard on both slices of bread; place them on top of the beef. Continue cooking for 90 minutes over low heat.

  • 50 g of butter
  • 2 slice of stale bread
  • 1 tablespoon of Dijon mustard
  • 1 stalk of fresh parsley
  • 1 leaf of bay leaf
  • 6 large onion
  • 2 tablespoon of flour
  • 2 tablespoon of sugar
  • 2 tablespoon of vinegar
