Carrot tart tatin with fresh goat cheese, honey & thyme

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Peel the carrots.
  • 2.   Cut the carrots in half lengthwise and cook them in boiling water for 15 minutes.
  • 3.   In a tart dish lined with parchment paper, drizzle with olive oil, honey, and thyme, then spread evenly.
  • 4.   Once the carrots are cooked, arrange them in the tart dish. Season with salt and pepper.
  • 5.   Cover the carrots with the puff pastry and fold the edges inward. Prick it with a fork, then bake for 20 minutes at 180°C (350°F).
  • 6.   Once out of the oven, wait for 5 minutes before unmolding your tart. To do this: place a large plate/dish on top and flip it over with a quick motion.
  • 7.   Add some pieces of fresh goat cheese on top and drizzle with olive oil. It's ready!

  • 4 teaspoon of liquid honey
  • 4 pinch of thyme
