Carrot tart tatin with fresh goat cheese, honey & thyme

Instructions
1. Preheat the oven to 180°C (350°F). Peel the carrots.
2. Cut the carrots in half lengthwise and cook them in boiling water for 15 minutes.
3. In a tart dish lined with parchment paper, drizzle with olive oil, honey, and thyme, then spread evenly.
4. Once the carrots are cooked, arrange them in the tart dish. Season with salt and pepper.
5. Cover the carrots with the puff pastry and fold the edges inward. Prick it with a fork, then bake for 20 minutes at 180°C (350°F).
6. Once out of the oven, wait for 5 minutes before unmolding your tart. To do this: place a large plate/dish on top and flip it over with a quick motion.
7. Add some pieces of fresh goat cheese on top and drizzle with olive oil. It's ready!
