Onion, goat cheese & honey quiche

Instructions

  • 1.   Preheat the oven to 350°F. Place the pie crust in a tart pan and prick it with a fork. Pre-bake it for 5 minutes.
  • 2.   Meanwhile, peel and thinly slice the onions.
  • 3.   Heat a drizzle of olive oil in a skillet over medium heat. Add the onions and cook them for 25 to 30 minutes, stirring regularly.
  • 4.   Once the crust is pre-baked, remove it from the oven. Set aside.
  • 5.   Prepare the quiche filling. In a bowl, add the eggs, milk, and cream. Season with salt and pepper, then whisk everything together.
  • 6.   Halfway through cooking the onions, add a small drizzle of water to the skillet (1 tablespoon per person) and continue cooking.
  • 7.   Once the onions are cooked, add the honey and mix. Continue cooking for 1 to 2 minutes.
  • 8.   Slice the goat cheese into rounds.
  • 9.   Spread the caramelized onions on the bottom of the tart, then pour the quiche filling over them.
  • 10.   Add the goat cheese rounds on top of the quiche. Season with pepper, then sprinkle with thyme, if desired. Bake for 40 minutes at 350°F.
  • 11.   Once golden and cooked, remove the quiche from the oven and serve it with a green salad. It's ready!

  • 2 teaspoon of liquid honey
  • 3 yellow onions
  • 3 eggs
  • 100 ml of heavy cream
  • 100 ml of milk
  • 6 pinch of dried thyme
