Pretzels with mustard and honey sauce

A German specialty perfect for appetizers. These pretzels can be made in different sizes according to your preferences. Accompanied by a mustard and honey sauce, they are perfect for a culinary world tour.

Instructions

  • 1.   In a bowl, mix warm milk, yeast, and sugar. Let it rest for 10 minutes.
  • 2.   Add flour, salt, and melted butter. Knead until the dough is no longer sticky.
  • 3.   Cover and let it rest for 1 hour.
  • 4.   Punch down the dough, knead for a few seconds, and divide into 6 pieces.
  • 5.   Roll each piece into a 40 cm long rope, form a U shape, cross and fold to form a pretzel.
  • 6.   Bring 2 liters of water to a boil with salt and baking soda. Poach each pretzel for 1 minute.
  • 7.   Place on a baking sheet, brush with egg yolk, sprinkle with sea salt and poppy seeds.
  • 8.   Preheat the oven to 180°C and bake for 20 minutes.
  • 9.   For the sauce, mix mustard, honey, and lemon juice. Serve with the pretzels.

  • 12 cl of milk
  • 1 bag of dried baker's yeast
  • 1 powdered sugar
  • 250 g of flour
  • 50 g of melted butter
  • 5 g of salt
  • 2 liter of water
  • 25 g of sodium bicarbonate
  • 1 egg yolk
  • 2 tablespoon of poppy seed
  • 3 Dijon mustard
  • 1 honey
  • ½ lemon juice
