Fried Plantain Bananas (Alokos)

Instructions

  • 1.   Peel and cut the plantain bananas into slices about 5 mm thick.
  • 2.   Heat peanut oil in a frying pan.
  • 3.   Sprinkle the bananas with salt and fry them for 4 to 5 minutes until golden brown.
  • 4.   Drain on paper towels.
  • 5.   For the sauce, blend the tomatoes, shallot, and red chili pepper.
  • 6.   Heat the sauce in a saucepan, bring to a boil, and simmer for 5 to 10 minutes.
  • 7.   Stir in white wine vinegar into the sauce.
  • 8.   Serve the bananas with the sauce.
