African Flour Croquettes

African croquettes, also known as Chin Chin in Nigeria, are crispy and soft donuts, perfect for an appetizer. This recipe is typical of several African countries.

Instructions

  • 1.   In a bowl, mix the egg and sugar.
  • 2.   Add the butter, milk, vanilla sugar, baking powder, baking soda, and nutmeg.
  • 3.   Mix well and add the flour.
  • 4.   Work the dough until it is smooth.
  • 5.   Form a ball and let the dough rest in the fridge for 2 hours.
  • 6.   Roll out the dough on a floured surface, make thick long strips, and cut them into small squares.
  • 7.   Sprinkle with flour to prevent them from sticking.
  • 8.   Fry in very hot oil until golden brown.
  • 9.   Remove from the oil and place on paper towels.

  • 400 g of flour
  • 100 g of powdered sugar
  • 1 teaspoon of nutmeg
  • 1 egg
  • 1 bag of vanilla sugar
  • 60 g of melted butter
  • 1 bag of baking powder
  • 1 teaspoon of bicarbonate
  • 100 ml of milk
  • 1 liter of frying oil
