Instructions

  • 1.   Make the syrup. Mix water, honey, and sugar. Heat until the mixture lightly boils.
  • 2.   Remove from heat and add the spices, orange blossom water, and pastis. Let infuse and cool slightly.
  • 3.   Mix the flours, baking soda, and salt in a bowl.
  • 4.   Pour the warm syrup while stirring.
  • 5.   Add the butter in small pieces to the dough.
  • 6.   Let it rest in the refrigerator overnight.
  • 7.   The next day, preheat the oven to 210°C (410°F), or thermostat 7.
    Bake in a mold for 10 minutes at 210°C (410°F), then reduce the temperature to 160°C (320°F), th.5, for 50 minutes.
  • 8.   Allow to cool completely before unmolding.
