Crustless mini quiches

These soft and moist crustless mini quiches are the perfect appetizers for a delicious and quick aperitif, whether with friends or family. And they are very easy to make, even for children. Plus, they are quick to prepare and won't take up much of your time. With the four different recipes I propose, there is something for everyone, including vegetarians. They are perfect for any season and can be stored for several days, so you can prepare them in advance.

Instructions

  • 1.   Sauté the bacon in a hot pan until golden. Drain the excess fat. Cut the sun-dried tomatoes into small pieces, chop the spinach, and slice the mushrooms.
  • 2.   In one pan, sauté the fresh spinach until it has reduced and released all its water. Do the same with the mushrooms in another pan with a drizzle of olive oil, then set aside.
  • 3.   In a bowl, mix the eggs, cream, milk, salt, pepper, and cornstarch. Use an immersion blender if necessary to obtain a smooth mixture.
  • 4.   Preheat your oven to 175°C (350°F) and fill your muffin molds (if they are not silicone, remember to grease and lightly flour them) three-quarters full with the mixture.
  • 5.   In 5 of the molds, add the bacon and Emmental cheese. In another 5, add the sun-dried tomatoes and goat cheese. In 4 more, add the mushrooms and pesto. And in the remaining 4, add the spinach and feta cheese. Bake for 25 to 30 minutes and enjoy!

Notes & Suggestions

  • Customize these bite-sized treats according to your taste: leek slices, zucchini rounds, julienned bell peppers (previously sautéed in a pan), etc.
    You can customize them however you like, vary the fillings, make more with bacon and Emmental and fewer with the others, or vice versa... Be creative and enjoy!

  • 140 g of thick sour cream
  • 115 g of Cornstarch
  • 90 g of smoked bacon
  • 20 g of grated emmental
  • 65 g of dried tomato
  • 35 g of goat cheese
  • 100 g of button mushroom
  • 4 teaspoon of green pesto
  • 180 g of fresh spinach
  • 40 g of feta
  • salt (according to taste)
  • pepper (according to taste)
