Maâkouda (Moroccan potato cakes)

Instructions

  • 1.   Cook the potatoes whole with the skin in boiling water. Once cooked, let them cool down and then peel them.
  • 2.   Mash the potatoes to obtain a smooth puree without too many lumps.
  • 3.   Add beaten eggs, salt and pepper, saffron, finely minced garlic, and chopped parsley.
  • 4.   Mix everything well.
  • 5.   Then, using a spoon or your hands, form a medium-sized ball of puree. Roll it in flour and flatten it to form a cake.
  • 6.   In a frying pan, pour frying oil. Once hot, add the cakes.
  • 7.   Cook for 2 to 3 minutes on each side until they have a nice golden color.
  • 8.   Once cooked, place the cakes on absorbent paper to remove excess grease.
  • 9.   Serve with a small salad of tomatoes and olives, for example.
  • 10.   Enjoy your meal!
