Instructions

  • 1.   Rinse the spinach. Blanch them for 5 minutes and drain them.
  • 2.   Chop the spinach and put them in a saucepan with butter, milk, cream, and half of the parmesan. Season with salt, pepper, and nutmeg.
  • 3.   Meanwhile, cook the pasta in salted boiling water. Drain.
  • 4.   Mix the spinach with the egg yolk off the heat, pour over the pasta, and serve.

  • 20 cl of milk

  • 100 g of grated parmesan
  • 1 pinch of ground nutmeg
